Studying: clinical human research on functional foods and cardiovascular health.
Specifically, analyzing the effects of blueberry consumption on cardiovascular risk
factors, such as blood pressure, arterial stiffness, and endothelial function, in older
adults with elevated or stage 1 hypertension.

Studied: (1) insect-induced food allergens. Specifically, began to develop a
purification method for mealworm tropomyosin and examined the molecular
characterizations of isolated mealworm tropomyosin. (2) entomophagy, factors that
affect willingness to consume insect-based foods, and effects of exposure on
willingness to consume insect-based foods. (3) analyzed volume of sweat production in
individual sweat glands. (4) analyzed whether carbonic anhydrase participants in sweat
production
